As a fellow Temple University College of Music alum, John is right on the money. Pat's or Geno's (everyone always swears by their favorite--they're right across the street from each other in South Philly) are timeless. What you see on menus in other cities labeled as "Philly Steak" just ain't nothin' like the real thing.
My college roommate, who was also a music major, would wait until a night when I studied until 2:30 and finally crawled into bed. Then he'd walk over to my bed and whisper, "Steve--Pat's. Steve--now." I'd grumble a few times, being exhausted. But eventually he'd drag me out of bed and we'd ride (in MY CAR--that's why he woke me!!) down to Pat's and find outselves munching on a "Cheez-with" (cheese steak with onions) at 4 o'clock in the morning. Pat's was open 24/7 long before anyone began using that expression.
