One place you might want to look at is Tennessee Tech. I have a trumpet player friend here who is an Electrical Engineering major, but plans on working in the Music Engineering/Technology field once he's out of school. One of the heads of the Physics department here is an accomplished organist, he gives a recital about once a year. The tuba studio goes without saying... you couldn't ask for much of a better teacher than Winston Morris. Robert Jager and Greg Danner both teach composition at TTU as well. I'm sure there are many other great schools, but Tennessee Tech is definitely a place you might want to check out. I'll post the link below.
