This is as close as you'll get to a book about the NBC Symphony itself. The author, a well-known music reviewer and racontuer has been attending concerts in New York since the late '30s, and knows where the bodies are buried. He was or maybe still is curator of the Wave Hill collection, where all the surviving transcriptions, including rehearsals and out takes, are stored. He gives full repertoire for every concert program during the orchestra's lifetime, and there is a personnel page.

I don't have a copy, I gave mine to a friend, and haven't replaced it yet. It is readily available.
