Usually, the valve and tuning slides are replaced with longer ones. Alternately the existing slides could be fitted with a kind of jacket to prevent them being pushed in too far. I'm not sure if anything else needs to be done. (lead pipe etc.)
I have played an old converted Boosey and the intonation wasn't wonderful but it was usable. You'll probably find that it won't get any easier to blow and this is probably due to the design and brass used at the time (must be about 1910 ish). I have a 1970s Boosey & Hawkes Imperial and even that is nowhere near as good to blow as a modern Sovreign.
