If you search the archives here, you'll find fairly extensive discussions about sheet music scanning software, generally rather pessimistic as to saving time this way. It seems a common experience that you have as much job editing the scanned music as writing it directly from the beginning. I seem to remember that a program called SharpEye was most positively judged.
