I would think that if the copper coated valve is not frequently used, there should be less corrosion. All metals will oxidise when expose to oxygen in air or water and salts from the saliva. For stainless steel, there is a layer of chromiun oxide that keeps it 'stainless'.This layer quickly replace itself when being scrapped off. However this is corrosion resistant not corrosion proof.
Anyway, as I understand all valves and casing are lapped, that is constantly 'rubbed' to attain the tolerance after which subsequent usage will result minimal metal loss, with adequate lubrication. Also, I think to use something hard against some soft will get a good fit. Just like the piston rings in automobile engines. I think no matter how hard we use the valves, would not be as much frequency as the automobile engines.
