Find the CD "Live On U" by A La Carte. Pete Ostle is an Army Band string bass player who also plays tuba, and he does a pretty good job of laying down a latin beat on the latin tunes on this CD. And, oh, by the way, it's a killer CD, so even if it doesn't meet your needs, you'll be glad you bought it.

For something a little less hip, tune to any hispanic radio station, and listen. The bass line, whether played on strings or on tuba, is right there. For a lot of polka-style conjunto music, a straight polka bass line will work just fine, complete with all your favorite changes. In Texas (where I grew up), most Mexican music was border conjunto, and was very closely kin to the polka music of the German and Czech immigrants that also populate South Texas. Just don't wear the lederhosen.
