That's because your stomach is acclimated to eating greasy food and is producing stomach acid to deal with it. A gradual shift away from foods requiring so much acid to digest, will not leave you with the Chinese Dinner Syndrome effect. The only real kicker is you have to find fruits and veggies that you actually like eating, because otherwise no matter what your will power level, you won't make a change.
I am sympathetic to your schedule...been there done that. Was in pretty bad physical shape when I got out of engineering school (which was much more difficult for me than music school was) and had to get serious right away with nutrition and sensible eating. I wish I had done it sooner.
