Phantom power is mainly used for cardioid mics. Those mics require an "outside" power supply instead of yours which uses a battery. Keep your phantom power switch turned to off when using the mic you own, though generally it does not hurt a mic that does not requre phantom power, it doesn't it help either. Only turn it on for a microphone that explicitly tells you it needs phantom power. (usually 48V)
As far as connecting your mic to your mixer with the adapter, there will be no loss in signal transfer as far as you will be able to tell with the system you are using. A difference would only be noticable on a much hiher end mixer and recording device.
Now that you have a mixer, I would suggest looking into some microphones designed to capture lower sounding musical instruments. Though everyone here seems to hate EB**, you can find outstanding deals on equipment, microphones, and accessories. Feel free to email me with any questions you might have with recording.
