I you were working for me (untrained), I'd teach you how to do a few easily taught things that I don't like to do and have you do them over and over.
Go up to Seattle and study repair for a year if you are really interested in at least (sorta) getting some familiarity with many different types of instruments and operations.
If you aren't really that interested in tearing into repair skills right now, it sounds like John Stevens really must want you to come to school if he's trying to sell you on the availability of satisfaction of some of your other interests.
