My advice, start now!

I would recommend that you start an e-mail correspondance with the teacher at the schools you are looking at, and the paperwork (application) process today. Even if applications are not available, get together a resume, list of solo and chamber repertoire that you have performed, and write a statement of purpose of why you want to attend graduate school (many schools ask for one with the application.) Have everything ready to print off so when you do start the applications, they are ready. If you have done your undergraduate work at more than one location, start rounding up transcripts. Find 3-5 people willing to write letters of recommendation for you. It doesn't hurt to have some recordings of yourself together. And last but not least, save your money because this next year of your life will be a very expensive one.

Good luck!
