I went the mini-disk route. Very compact and quick to set up. Costs about the same as a decent cassette recorder, but sounds better (IMHO) and is more convenient. For example, when I record a concert, I program the mini-disk recorder to automatically place track markers every three minutes. Then when I play the recording back, I can jump to within a minute or so of anything almost immediately -- much faster than shuttling a tape back and forth.

I bought a Sharp 702 mini-disk recorder for ~$250 and an Audio Technica AT822 stereo microphone for ~$300 a year or so ago and I've been quite happy with the performance.
