Lots of great ideas below, just thought I'd throw in my 2 cents.
Beginners will benefit from starting with Vol.1, good tracks/chord progressions including the blues - the book alone will give you years of materials to study/practise/think about. Couple that with Vol.24, "Major and Minor", a great one that anyone can easily sound good playing along with. Vol.54 and Vol.70, "Killer Joe" are full of 'Jazz 101' tunes at easy tempos. From there you can go to whatever suits you.
Also consider, and this goes out to everyone, coming to the Aebersold's Summer Jazz Workshop, 6/29/03 thru 7/4/03 and 7/6/03 thru 7/11/03 for what has been for many a life-changing experience. They're a gas!! For more info go to www.jazzbooks.com/workshops.
