Here's a makeshift method that I have used: I use my old music notation software to write the rhythm for woodblock or some similar sound, making the first beat of each measure higher in pitch. Then I play it back while recording it as a WAV file in cool edit. Sections with different tempi can easily be cut and spliced together in Cool Edit. Then I put the final product onto a CDR.
