I don't know if you're aware of the Aebersold play along series. They are only avaiable in book/CD format (i.e. not online), but they are generally considered the premiere practice tools of this type (along with Band in a Box).

People have been suggesting for some time that they make individual tracks available for sale over the internet, but to my knowledge, this has yet to happen.
