traditional jazz or "dixieland" has as many subsets of styles within it as does "jazz" itself.

The bands that I play with - though no "charts" are used - incorporate a lot of secondary dominants, passing chords, and substitute chords for a smoother "supper club" type of sound (for the lack of a better term). This makes the band (at least in our perception) more listenable for those who might like to sit through the entire evening's engagement, rather than "pop in", grab a drink, and "pop out".

On the other hand, we leave certain parts of the repertoire alone as "jazzing" up the chords on a fairly clearly defined subset of the literature would probably appear comical, if not trite.
