It depends on what the rest of the rhythm section is doing and what the piece is. "Dixieland" is a term that is sometimes applied to a VAST amount of music, (everything from "Five Foot Two" to George Gershwin to Swing on some gigs). I prefer to play two to the bar but will sometimes do four behind someone taking a solo chorus, (trombonists seem to like this). Some leaders insist that I do no more than two to the bar, others are disappointed when I don't do four! I take more liberties when there are less people is a group, (a trio of banjo-trumpet-tuba, for example). The more players there are, the more "basic" my bass line becomes. Sometimes it takes a lot of self-discipline to "hold back", but a well placed two-to-the-bar beat can generate a lot of heat while staying out of the way of the solo instruments. Purely my opinion, but I believe that less is more in this style of playing.
