A great exercise that works wonders is when you are doing a run through of your piece, go run a lap or 2, or run up and down the stairs to get you breathing a little heavy. Then immediately come in, sit down, and start from the top of your piece to the end. This simulates what it feels like to be nervous, its really cool. And you do this a couple of times a week and your body gets used to what it feels like to be nervous, and you learn ways to cope with it.
