John Stevens has a 2 volume set (12 carols each) that are slightly more involved than the Alec Wilder "Tuba-Christmas" stuff. Generally, they're a bit more open voiced as well so there's a great deal more clarity. I've forgotten the publisher at the moment (could be Medici Music Press), but Portland Sheetmusic should be able to get a hold of these for you.
. . . and yes, the Lennie Niehaus Jazz Christmas Suite is very good & fun, too.
