Depending on the hymnal you use, there may be instrumental arrangements that accompany the hymns. Word Music publishes the Instrumental Hymnal, for example, that provides full orchestral parts that accompany the hymns. Otherwise, there are also smaller books that provide a bass part and might even have the melody line in bass clef. Often those books are for a group of bass instruments (t-bone, cello, bassoon, etc...) and the have the parts in octaves.

But, of course, you can always read the bass line out of the hymnal itself in the octave or down if you wish. I usually read it down 75% of the time to match the organ.
