One could become quite philosophical concerning this, but I'll just give a quick and easy list from my experience:
Air and Bourree by Bach/Bell
Most of the early Rochut/Bordogni melodic etudes
Perhaps the first movement of the Hindemith for a slightly more advanced entry level university student
If you can succesfully play all/any of these, most university music departments would be glad to take you onboard as a freshman
