1) When I listen to an ensemble playing in just intonation, the notes only sound wrong if the ensemble bites. Otherwise, if they are slightly our of tune, it will "sour" the music just a bit. But it won't ruin the music or anything silly like that.

2) Agreed. Recognizing pitches is only the first step to actually playing in tune yourself. Just because someone knows when they're in or out of tune, doesnt mean they will play perfectly in tune. I know a few people with perfect pitch that are simply horrible musicians regardless of or directlty because of their vaunted "pitch power". People with PP aren't monsters of talent. It takes them practice to play well, just as any of you have had to practice on anything.

I know I always play in tune, because i can hear that I play in tune. This, however, does not make me a master musician. It simply means I have one less thing to work on when I practice.

3) I know, through years of experiance, what notes like A, B, f# ect sound like. But recognizing notes is a little less of a shot in the dark then guessing jars.

To use your analogy, if the warehouse was a piece of music, and the jars were its notes, I can see each jar by itself,identify what is in each jar, the jar in relation to other jars, and the summation of all the jars. The equivilent "real world" version of this would be having complete mental knowledge of the warehouse stock.
