My understanding is that Helleberg is a term used in reference to the funnel like shape of the cup. Each basic maker has a regular Helleberg design (as in funnel cup) but, as you have said, aside from that every one is different.

Now, the Helleberg and Helleberg II is manily with the Schilke company. The Helleberg II is the same basic design (again, funnel) but the rim is very different. Schilke also offers a modified Helleberg II, with a more rounded inner edge of the rim called the Schilke Geib that also has a more medium-deep depth cup than a Helleberg II.

It sounds to me like you have it figured out...every one is a little different, with only the funnel type cup grouping them together as Helleberg mouthpieces.
