I have also heard that valve travel was the limiting factor on the bore of piston valve horns, but that it was also a materials issue. The brass used in early pistons needed more material between the valve ports for strength, which then added to the total travel, and limited the bore. Modern materials have allowed for shorter spacing between the ports on the piston and therefore larger bore piston valves, therefore you have the 0.800" bore on the Willson for example.
