In the "special bands", those in DC and at the academies, if troops really got depleted to the point that band members would take on a non-musical role, there is a contingency. Band members would work on post, in the duties normally done by the military police. These are jobs like guarding the gates and being the color guard at a funeral.
Of course, in reality, if troops were depleted to that extent, things would be extremely bleak for all of us.
