Why DO pros use different instruments?

I just read Jay's comments where he said many pros strive
for consistency of sound between horns, the trend towards
F tubas that sound like CC's is a good example.
If thats true, and if range is a function
of the face more than the horn,
then why DO these pros use different instruments?
